When you have a sweet tooth like mine the idea of cookies for breakfast is heaven. Especially when they are yummy, healthy, high protein cookies like these.
I followed the recipe as written (excluding the butter extract) and they were delicious.
I added a couple chocolate chips on top. I just couldn’t help myself.

I tried these pancakes because they are healthy and I love pancakes and I was trying to be gluten free at the time. The pinterest description said they”taste like french toast” but they really don’t. They taste like pancakes. I added chocolate chips, because lets face it, any meal is better with chocolate. They were really good and even reheated well to eat for the next few days for breakfast. The only change I would make would be to add a little more sugar, but I also have a big sweet tooth, so I require more sweetness than most people do.
The batter looks really clumpy, if you had a stronger blender or blended it longer, it may look more like regular pancake batter.
The batter cooked just like regular pancakes: pour it, wait for the bubbles, flip it.
